Zucchini Ricotta Galette

INGREDIENTS
1 1/4 cups all-purpose flour (chilled in the freezer for 30 minutes)
1/4 tsp salt
8 tbsp butter (cold unsalted, cut into pieces and chill again (1 stick))
1/4 cup sour cream
2 tsp lemon juice (fresh)
1/4 cup ice water
1 large zucchini (or 2 smaller ones, sliced into 1/4 inch thick rounds)
1 tbsp olive oil
1 tsp garlic (minced, roasted, fresh works as well)
1/2 cup ricotta cheese
1/2 cup Parmesan cheese (grated)
1/4 cup mozzarella (mozzarella)
1 tsp basil (dried)
1 egg yolk (for brushing)
