INGREDIENTS
2 tablespoons fresh thyme (minced)
2 tablespoons sesame seeds (toasted)
2 teaspoons ground sumac
1 teaspoon ground cumin
1/2 teaspoon sea salt
1 pound boneless skinless chicken breasts
2 tablespoons olive oil
2 tablespoons za'atar spice blend (recipe above)
1/4 teaspoon sea salt
1-1/2 cups cucumber (peeled and diced)
1-1/2 cups heirloom tomato (seeded and diced)
1 tablespoon fresh lemon juice
2 tablespoons fresh dill (chopped)
1/4 teaspoon sea salt (to taste)
1 cup whole milk kefir (I use goat milk kefir*)
1/2 cup feta cheese (I used goat milk feta)
1 cup cucumber (peeled, seeded, and finely chopped)
1 tablespoon fresh mint (finely chopped)
1 tablespoon fresh dill (finely chopped)
1/4 teaspoon sea salt (to taste)
cooked brown rice
