2 small heads of curly endive, 4 – 5 cups coarsely chopped (endive is neither escarole nor frisée , but frisée works just as well!)

1/3 cup apple cider vinegar (or combination of apple cider and balsamic 3:1)
•
Water
•
1/2 teaspoon salt
•
1 teaspoon raw sugar
•
2 teaspoons Dijon-type mustard
