Keep pancakes warm in a 250°F oven. You can also use the batter to make 8 waffles (7" diameter).

⅓ c old-fashioned rolled oats
⅓ c cornmeal
1½ tsp baking powder
½ tsp baking soda
1¾ c buttermilk
2 lg eggs
1 lg egg white
2 Tbsp brown sugar
