INGREDIENTS
• 1 small white onion, diced
• 2 cloves garlic, minced
• 5 oz pkg shiitake mushrooms, sliced (or any other mushroom)
• 3 carrots, peeled and sliced
• 1 zucchini, diced
• 1 yellow squash, diced
• 8 oz fresh or frozen green beans
• 15 oz can organic kidney beans, drained and rinsed
• 3 cups purple cabbage, shredded
• 3 cups R.W. Knudsen "Very Veggie" low-sodium, organic juice (or you can use low-sodium V8 juice)
• 2 cups Pacific organic, low-sodium chicken broth
• 2 - 14.5 oz cans Muir Glen organic, fire roasted, no salt added diced tomatoes
• 1 tsp Italian seasoning
• ½ tsp crushed red pepper flakes (optional)
• salt and pepper to taste
