680g (two 340g packs) mozzarella balls, cut into rounds (about 8 slices per ball)

1 cup all-purpose flour (seasoned with a tsp of salt, pepper and paprika)

2 large eggs
•
1-2 Tbsp hot sauce (for egg mixture)
•
2 cups panko breadcrumbs
•
Ranch dressing for dipping, optional
•
1 Tbsp cayenne pepper (adjust for spice preference)
•
1 Tbsp smoked paprika
•
1 tsp garlic powder
•
1 tsp onion powder
•
¼ cup brown sugar
•
½ tsp salt
•
½ tsp black pepper

Vegetable or canola oil (enough for frying)
