1 pound corkscrew-shaped pasta

2 tablespoons extra virgin olive oil (EVOO), divided
1/2 pound center-cut bacon, chopped into 1-inch pieces
1 medium onion, finely chopped
2 tablespoons all-purpose flour
1/2 cup chicken broth
2 cups milk
Salt and pepper
1 rounded tablespoon spicy mustard
2 cups sharp, yellow cheddar cheese, shredded and divided
2 cups jalapeño jack cheese, shredded and divided
1 red bell pepper, chopped
2 medium zucchini, sliced into half moons
1 box frozen peas
A handful of parsley, chopped
