3/4 cup chopped mushrooms
1/4 teaspoon salt
2 tablespoons soy sauce (or tamari to make it gluten-free)
1 1/2 tablespoons sesame oil
2 teaspoons rice vinegar
2 cups cooked white rice
1/3 cup cashew pieces
2 large eggs, whisked
