Seitan is made from wheat and has a taste and texture hearty enough to satisfy any meat eater. Serve this dish over pasta or rice with a crisp green salad.

1 large onion

1/2 cup white wine or water
•
3 cups sliced mushrooms
•
1 large green bell pepper, seeded and diced
•
1 red bell pepper, seeded and diced (optional)
•
2 tablespoons minced garlic (about 8 large cloves)
•
2 tablespoons chopped fresh basil, or 2 teaspoons dried basil
•
1/4 cup light miso, dissolved in 1/2 cup water
•
1 28-ounce can chopped tomatoes
•
1/4 teaspoon black pepper
•
16 ounces seitan, cut into thick slices
