Vegetarian Chili

INGREDIENTS
Ingredients Serves 6
2 tbsp canola oil
1 1⁄2 cup yellow onion, chopped
1 cup red bell pepper, chopped
2 tbsp garlic, minced
2 to 3 Serrano pepper, stemmed, seeded, and minced, depending upon taste
1 medium zucchini, stem ends trimmed and cut into small dice
2 cup fresh corn, kernels (about 3 ears)
1 1⁄2 lb portobello mushrooms, about 5 large, stemmed, wiped clean and cubed
2 tbsp chili powder
1 tbsp ground cumin
1 1⁄4 tsp salt
1⁄4 tsp cayenne pepper
4 large tomatoes, peeled, seeded and chopped
3 cup cooked black beans, or canned beans, rinsed and drained
15 oz can tomato sauce
1 cup vegetable stock, or water
1⁄4 cup fresh cilantro leaves, chopped
1 cooked brown rice, accompaniment
1 sour cream, or strained plain yogurt, garnish
1 avocado, diced, garnish
1 essence, recipe follows, garnish
1 green onion, Chopped, garnish
2 1⁄2 tbsp paprika
2 tbsp salt
2 tbsp garlic powder
1 tbsp black pepper
1 tbsp onion powder
1 tbsp cayenne pepper
1 tbsp dried oregano
1 tbsp dried thyme
