Vegetarian and Vegan Shallot and Shiitake Gravy Recipe

3 shallots, chopped
1 teaspoon dried thyme
1 (3.5-ounce) package fresh shiitake mushrooms, stems discarded and caps chopped
1/4 cup white wine
2 1/2 cups mushroom stock
2 tablespoons water
1 tablespoon all-purpose flour
