4 large carrots (peeled, diced small)
2 cups frozen peas (thawed)
1 cup basmati rice (rinsed)
2 cups vegetable stock
Kosher salt and freshly ground black pepper (to taste)

1 English cucumber (finely chopped)
1 teaspoon ground coriander
1 teaspoon ground cumin
1/4 cup cilantro (leaves only, minced)
1/4 cup green onion (white and light green parts only, minced)
