INGREDIENTS
•2 tablespoons olive oil (reduced from original)
•3 slices Ezekiel bread or french bread, chopped into 1/2-inch croutons
•2 1/2 pounds tomatoes, diced (I used grape)
•1-2 cloves garlic, minced
•2 tablespoons Sucanat or regular sugar
•1-2 teaspoons Kosher salt (I used 1 tsp kosher sea salt)
•1 teaspoon freshly ground black pepper
•1/2 cup thinly slivered basil leaves, lightly packed
•1/2 cup 3 minute vegan parmesan cheeze or regular Parmesan cheese
