INGREDIENTS
Osso buco
4 veal knuckle (osso buco) steaks
Sea salt and black pepper
3 tbsp olive oil
1 large onion, peeled and chopped
1 large carrot, peeled and chopped
3 garlic cloves, peeled and sliced
1 bay leaf
Few thyme sprigs
1 tbsp tomato puree
200ml dry white wine
800m veal stock
Pommes boulangere
250ml chicken stock
5 garlic cloves, peeled
Few thyme sprigs
Few rosemary sprigs
2 tbsp olive oil, plus extra to brush
2 banana shallots, peeled and finely chopped
200g (about 4 medium) potatoes
25g butter, diced
