1 large onion diced (3 for turkey)

2 large eggs (up to 8 for turkey)

1 large pinch of salt

¼ teaspoon freshly cracked black pepper

½ pound unsalted butter (add ½ pound for turkey)

¼ to ½ cup fresh turkey stock (optional)
