INGREDIENTS
3/4 cup all purpose gluten free flour blend ((I used Better Batter; please click thru for full info on appropriate blends))
1/2 teaspoon xanthan gum ((omit if your blend already contains it))
1/4 cup certified gluten free old-fashioned rolled oats ((See Recipe Notes))
1/4 cup packed light brown sugar
1/4 cup granulated sugar
1 1/2 teaspoons ground cinnamon
1/8 teaspoon kosher salt
6 tablespoons unsalted butter (melted and cooled)
4 1/2 pounds sweet potatoes ((5 to 6 large sweet potatoes, roasted and skins removed (See Recipe Notes))
1/4 cup granulated sugar
1/4 teaspoon kosher salt
1/2 cup milk
4 eggs (lightly beaten)
5 tablespoons unsalted butter (melted and cooled)
1/2 teaspoon vanilla extract
