The Reuben Bowls That Are Our New Favorite Dinner

1 pound deli corned beef (from deli counter), sliced, then cut into strips
16-ounce bag coleslaw or 1 pound red cabbage
2 green onions, finely sliced
14.5-ounce can sauerkraut, drained (~1 cup)
1 teaspoon caraway seeds
¼ teaspoon salt
⅛ teaspoon pepper
1 cup Swiss cheese, grated
