This recipe takes the classic flavors of a BLT sandwich and stuffs them into a bite sized appetizer. For the “Stuffed BLT Appetizer Bites” recipe, keep reading! Ripe, red tomatoes are picture perfect and ready to eat right now. For this easy recipe, simply slice off the top of some cherry tomatoes and hollow out the inside. Ok, I have to confess, this recipe isn’t exactly a BLT because the filling is actually made with spinach instead of lettuce. You forgive me, right? It just works better to make the filling for these appetizer bites. Now, in your food processor, blend together spinach, breadcrumbs, garlic, salt and cayenne pepper. If the mixture seems too stiff, you can moisten with some of the tomato pulp. Finally, fold in some crumbled bacon and stuff the tomatoes! After 15 minutes in a 400 degree oven you have an addictive and mouth-watering summer appetizer!
