INGREDIENTS
9 oz chicken breasts cut into strips
6 oz medium rice noodles
2 1/2 tbsp sunflower oil for frying
2 shallots, finely sliced or 1 onion
1/4 tsp superfine sugar
1 clove garlic, crushed
1/2 tsp red chilli, sliced (optional)
1 leek, thinly sliced
4 oz broccoli, cut into small florets
10 oz beansprouts
2 eggs, lightly beaten with a little salt
2 tbsp rice wine vinegar
2 tbsp soy sauce
2 tsp fish sauce
2 tbsp sweet chilli sauce
1/3 cup crushed peanuts (optional)
MARINADE
1 tbsp each soy sauce and sake
1 1/2 tsp superfine sugar
1 1/2 tsp cornstarch
