½ cup red diced onion

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon cumin

2 teaspoons olive oil

1 teaspoon chili powder
•
1/4 – 1/2 cup chopped cilantro
•
1 can black beans, drained
•
2 teaspoons fresh lime juice
•
1 cup shredded veggie cheddar cheese (optional)

6-8 burrito-size tortillas
