2 tablespoons unsalted butter

2 cups water

Salt to taste

1 cup cottage cheese
•
3 eggs
•
¼ cup low-fat milk
•
¼ cup mild honey or agave nectar
•
1 teaspoon vanilla extract
•
¼ teaspoon freshly grated nutmeg
•
½ cup (3 ounces) diced dried apricots
•
½ cup (3 ounces) raisins (or omit and use all apricots)

Finely grated zest of 1 lemon
