INGREDIENTS

•1 cup vegetable oil (I use olive or a mixture of olive and canola)

•2 tsp vanilla extract

•3 cups all-purpose flour

•3 tsp baking powder

•2 tsp ground cinnamon

•2 tsp ground nutmeg

•2 cups shredded summer squash (you can use dried summer squash and just reconstitute it with water prior to blending it in)
