1 red bell pepper, cut into rings
1 yellow bell pepper, cut into rings
1 green bell pepper, cut into rings
1 large red onion, cut into rings
1 (3 ½ -pound) whole red snapper, cleaned and gutted
1 cup basil pesto (homemade or store-bought)
1 large homegrown tomato, cut into slices
1 large lemon, cut into slices
1 bunch fresh basil leaves with stems
1 tablespoon Cajun seasoning
¼ cup olive oil
1 large lemon, quartered, for serving
