1 clove garlic, crushed and chopped
1 piece ginger, sliced
2 green onions, sliced diagonally (optional)
Marinade:
2 tablespoons light soy sauce
1 tablespoon Chinese rice wine or dry sherry
1/4 teaspoon sesame oil
1 tablespoon cornstarch
Sauce:
3 tablespoons dark soy sauce
1 tablespoon sugar
1 tablespoon sherry
juice from the stir-fried meat
Oil for stir-frying
