2 tablespoons mixed color whole peppercorns
½ teaspoon kosher salt
1 tablespoon butter
1 teaspoon vegetable oil
1 tablespoon minced shallots
½ cup beef stock or veal demi-glace
¼ cup cognac
¼ cup cream OR 2 tablespoons butter
