1 cup cooked, drained and still hot chopped spinach or swiss chard.

Dash of nutmeg, salt, and pepper
•
1 tablespoon onion, minced
•
1 tablespoon sweet red pepper, chopped or green bell pepper
•
2 eggs, beaten
•
1/2 teaspoon salt
•
dash of tabasco, to taste
•
If desired, dash of fajita spices
•
For Indian taste, add a dash of garam masala
