3-4 spring onions chopped (shallots)

garlic (to taste)

a big bunch of spinach

½ - 1 cup of sour cream or cream

1 cup of grated cheese, tasty or mozzarella
•
½ cup grated parmesan
•
a few slices of crusty bread, toasted
•
extra herbs and garlic
