INGREDIENTS
Editor's note: While overall a very tasty recipe, we adjusted the ratio of potato to flour for a more cohesive dough.
We also suggest reducing the amount of butter to half for a bit healthier version.
1 stick (4 ounces) unsalted butter
2 garlic cloves, grated or minced
1 small onion, minced
1 bay leaf
Pinch of crushed red pepper
One 28-ounce can diced Italian plum tomatoes, juices reserved
4 sun-dried tomatoes packed in olive oil, roughly chopped
Salt and pepper to taste
2 (10 ounce) packages frozen chopped spinach, thawed and squeezed very dry
3 cups Simply Potatoes Traditional Mashed Potatoes (suggestion: reduce to 2 cups)
4 large eggs, lightly beaten
Pinch of freshly grated nutmeg
1/4 cup freshly grated Parmesan cheese, plus more for serving
3 cups all-purpose biscuit mix
