INGREDIENTS
Ingredients for one casserole, serving 6 as a main course, and many more as a side course
For the filling:
2 tablespoons unsalted butter
1 tablespoon olive oil
1 large fennel bulb, cored and thinly sliced
1 large white onion, thinly sliced
Salt and freshly-ground black pepper
1/2 teaspoon ground nutmeg
4 garlic cloves, minced
10 ounces fresh, organic Baby Spinach Leaves, roughly chopped
1 tablespoon flour
1 1/2 cups half-and-half
2 (15-oz.) cans small white beans, drained and rinsed
For the topping:
2 cups breadcrumbs from fresh, home-made-type bread
2 cups grated Parmesan cheese
3 tablespoons unsalted butter, melted
Set oven rack to middle position; preheat oven to 400F.
