1 pound ground pork sausage

2 cups tomato puree or sauce

1½ cups cottage cheese (or Ricotta if you prefer)

1 egg
•
½ cup Parmesan cheese
•
1 cup Mozzarella cheese, divided
•
1 teaspoon dried parsley
•
1 teaspoon dried oregano
•
½ teaspoon onion powder
•
½ teaspoon red pepper (more or less depending on preference, I found ½ teaspoon had just the right kick without being over-powering)
