Ingredients For spiced peaches

3 cinnamon sticks

1 1/2 tsp. whole allspice

1 Tbs. whole cloves

1/2 tsp. cracked ginger

4 C. sugar

2 C. cider vinegar

2 C. water

1/8 tsp. salt

9 peaches, peeled, halved and pitted
How To Make spiced peaches
-
1Tie spices loosely in cheesecloth. In a large saucepan bring to boil sugar, vinegar, water and salt, stirring to dissolve sugar. Add spice pouch; boil 10 minutes. Add half the peaches; boil slowly 15 minutes or until tender. Spoon out carefully into hot sterilized jars. Repeat with remaining peaches. Discard spice pouch. Pour syrup over peaches to cover. Seal tightly and store in refrigerator. Will keep several weeks. NOTE To peel peaches easily, blanch in boiling water 1 minute. Quickly plunge into cold water. Slip or pull off peel with paring knife.
