¼ tsp ground nutmeg
3 large eggs, room temperature
1⅓ cups light brown sugar, packed
¾ cup canola, vegetable, or safflower oil
¾ cup buttermilk
2 tsp vanilla extract
2 cups finely grated carrots ((see Notes))
1 cup shredded coconut ((see Notes))
¾ cup crushed pineapple, drained
¾ cup lightly toasted chopped pecans
