2 ½ teaspoons garam masala
1 teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
¼–½ teaspoon cayenne pepper
1 teaspoon kosher salt
1 – 796ml can diced tomatoes
1 ½ tablespoons pure maple syrup
1 small head cauliflower, cut into florets
1 – 540ml can chickpeas, drained and rinsed
½ cup canned coconut milk, well shaken
½ cup roasted cashews, optional
2 tablespoons toasted coconut, optional
Cilantro and green onions, for serving
