Southwestern Sweet Potato Soup
INGREDIENTS

1/4 cup any vegetable oil
•
2 large onions, peeled and chopped
•
4 cloves garlic, sliced
•
4 cups chicken broth
•
2 large sweet potatoes, washed, peeled and grated
•
1 chipotle pepper, packed in adobo sauce
•
1 teaspoon ground cinnamon
•
1 teaspoon ground cumin
•
a sprinkle or two sea salt
•
1/2 cup sour cream
•
1 bunch cilantro, finely chopped
•
1 whole wheat or soft corn tortilla
•
4 - 6 sprigs fresh cilantro, for garnish
