4 boneless (skinless chicken breasts)
1 1/2 cups buttermilk
2 cups canola or vegetable oil
1 1/2 cups all-purpose flour
2 tablespoons cornstarch
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
6 ounces cremini mushrooms, (sliced)
1 large sweet onion, (thinly sliced)
2 tablespoons olive oil
2 cups demi-glace, (see below)
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground pepper
2 teaspoons olive oil
1/2 cup diced celery
1/2 cup diced carrots
1/2 cup diced onion
1/2 cup dry red wine
2 cups beef broth
1 tablespoon tomato paste
