Southern crab cakes

"These crab cakes have a nice kick, but not so much as to mask the taste of fresh crab!..."

INGREDIENTS
1 pound lump crab meat, picked over for shells
1 teaspoon salt
1/2 teaspoon hot sauce
1/2 teaspoon Cajun seasoning
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
2 eggs, divided
1/4 cup mayonnaise
1 teaspoon Dijon mustard
2 scallions, finely chopped
Juice of 1/2 lemon
3/4 cup breadcrumbs, divided
1 teaspoon water
3 tablespoons vegetable oil
