Ingredients For winter sausage soup

2 1/2 - 3 lbsweet italian sausage, sliced

3 cred potatoes, peeled and cubed

1 ccelery, chopped

1 ccarrots, sliced

1 mdonion, chopped
-
28 ozcan whole tomatoes, undrained and chopped

8 cbeef broth
-
1 tspbrown sugar
-
1/4 tspsalt
-
1/4 tspground black pepper
-
3 cshredded cabbage
-
1 cfine egg noodles, uncooked
-
freshly grated parmesan cheese, to garnish
How To Make winter sausage soup

1Brown the sausage in a large Dutch oven over medium heat until done. Drain well, and set aside. Wipe the pan out with paper towels.

2Return the sausage to the pan. Add the potatoes and the next 8 ingredients (through black pepper). Bring to a boil; cover, and reduce heat and simmer for 1 hour.

3Add the cabbage and noodles. Cover and simmer for an additional 15 minutes.

4To serve, ladle the soup into bowls. Sprinkle with freshly grated Parmesan cheese.
