I like this because it is different from the usual sausage soups with white beans and kale or spinach.

Ingredients For winter sausage soup

  • 2 1/2 - 3 lb
    sweet italian sausage, sliced
  • 3 c
    red potatoes, peeled and cubed
  • 1 c
    celery, chopped
  • 1 c
    carrots, sliced
  • 1 md
    onion, chopped
  • 28 oz
    can whole tomatoes, undrained and chopped
  • 8 c
    beef broth
  • 1 tsp
    brown sugar
  • 1/4 tsp
    salt
  • 1/4 tsp
    ground black pepper
  • 3 c
    shredded cabbage
  • 1 c
    fine egg noodles, uncooked
  • freshly grated parmesan cheese, to garnish

How To Make winter sausage soup

  • 1
    Brown the sausage in a large Dutch oven over medium heat until done. Drain well, and set aside. Wipe the pan out with paper towels.

    Return the sausage to the pan. Add the potatoes and the next 8 ingredients (through black pepper). Bring to a boil; cover, and reduce heat and simmer for 1 hour.

    Add the cabbage and noodles. Cover and simmer for an additional 15 minutes.

    To serve, ladle the soup into bowls. Sprinkle with freshly grated Parmesan cheese.
