Ingredients For winter gazpacho

  • 14 1/2 oz
    chicken broth
  • 14 1/2 oz
    canned diced tomatoes, undrained
  • 8 oz
    zucchini in tomato sauce
  • 1 c
    day old italian or french bread, torn
  • 15 1/2 oz
    canned chickpeas, rinsed, drained
  • black pepper

How To Make winter gazpacho

  • 1
    In medium saucepan, bring broth and tomatoes to a boil. Stir in zucchini with sauce and bread. Reduce heat; simmer 10-15 minutes, stirring to mash bread into soup. Stir in chickpeas; simmer until heated through. Season to taste with pepper.
