I came up with this recipe based on all the left over veggies from last year....LOL like 3 days ago...Simply delicious!

Ingredients For veggie orzo soup

1/2onion, chopped

1/2green pepper, chopped

3garlic cloves, smashed

1zuchinni, chopped

1celery stalk, chopped

1 bunchasparagus, chopped

1 ccabbage, chopped

1 lgcarrot, chopped

1 canfire roasted tomatoes

1 candark kidney beans, drained

1 Tbspolive oil

bunchparsey
-
bunchcilantro

1/4 corzo pasta, uncooked

salt/pepper to taste
How To Make veggie orzo soup

1In a large pot, saute onions, peppers, zucchini, carrots, asparagus and cabbage for 5 mins.

2add in the rest of the ingredients and simmer 30 mins, stirring occasionally so pasta doesn't stick.

3serve with shavings of Manchego or Parmesan cheese.
