Ingredients For veggie-bean soup

  • 3 c
    water
  • 3 c
    chicken broth
  • 1 md
    onion, diced
  • 2
    garlic cloves, smashed
  • 1 can
    tomatoes, canned italian-style and diced
  • 1 can
    kidney beans, drained
  • 1 can
    white beans, drained
  • 1 pkg
    spinach, fresh
  • 1 md
    zuchinni, cut into bite size pieces
  • 1 md
    broccoli florets, fresh
  • salt/pepper to taste
  • parmesan cheese & croutons for garnish, if desired

How To Make veggie-bean soup

  • 1
    combine water and chicken broth, bring to a boil
  • 2
    add all the ingredients ( remember to drain the beans) except the parmesan cheese.

    simmer about 20 mins....garnish with the parmesan cheese and croutons, if desired
