I am a vegetarian wantabe I try not to eat meat but sometimes I just can't help myself :-)This is a delicious Soup even my picky husband likes.

Ingredients For vegetarian vegetable soup

2 canno salt added whole kernal corn

2 canno salt added cream of corn

2 candiced no salt added tomatoes

2 canno salt added string beans

2 can2 cans stewed tomatoes

2 can2 cans sliced carrots

2 canno salt added spinach
-
2 canslices carrots
-
1 pkgfrozen butter beans

1 pkgfrozen dixie lee or field peas

2 canokra
-
2 cangarden peas
-
1sweet onion
-
2garlic cloves
-
2 Tbspolive oil, light

1 lbirish potatoes diced
How To Make vegetarian vegetable soup

1use at least half,more if you can of no salt added veggies. you can use fresh or frozen veggies but it will add to the prep & cooking time.

2open cans & put veggies in a large roaster pan,take your hand & kinda smoosh the stewed tomatoes & ocra, peel & dice onion & garlic& stir it all together, rinse cans & add a little water if needed,cook in oven on 375 until hot & flavors are blended, add olive oil after you turn oven off.
