A simple recipe that can be used with any combination of vegetables. This freshly made soup is easy to make and can be as varied as the vegetables you add to it. Enjoy it with crackers, bread or potato chips

Ingredients For vegetable soup

  • olive oil
  • 1
    onion
  • 2 clove
    garlic
  • 500 g
    vegetables of choice
  • 1 l
    stock
  • dried herbs
  • salt
  • pepper

How To Make vegetable soup

    Chop the onion and sweat in olive oil. Dice vegetables and crush garlic, add to onion.

    Add stock, dried herbs, salt and pepper Bring to boil and simmer for 10 minutes.

    Blend/liquidize to desired consistency and adjust seasoning.
