Easy and Yummy! You can also go all out and use any fresh veggies you would like. Of course this would add cooking time.

Ingredients For v8 vegtable soup

  • 1 bottle
    v8 juice ( i use the large bottle)
  • 1
    small onion (chopped)
  • 1 lb
    ground beef (browned)
  • 1 pkg
    mixed veggies
  • 4
    red potatoes (cubed)
  • 4 Tbsp
    sugar
  • salt and pepper to taste

How To Make v8 vegtable soup

  • 1
    Saute onion in olive oil. Add ground beef and brown, then drain off excess fat.
  • 2
    While meat is browning, cube and boil potatoes in a separate pot,boil until tender.

    After meat is browned add the V8 juice, frozen vegetables,sugar, and salt and pepper to taste.

    When soup is heated through I add the potatoes. This keeps the potatoes from getting mushy.
