Ingredients For tomato soup (quick & easy)

  • 1 medium onion, diced
  • 2-3 cloves of garlic, minced
  • 1 tb of olive oil
  • 2- 15 oz. cans of diced tomatoes, good quality, undrained
  • 1 cup of chicken broth, i use better than bouillon
  • 1/2 tsp salt
  • black pepper to taste
  • 1 tsp italian seasoning
  • 1/2-1 tsp garlic powder
  • 1 tb sugar
  • 1/4 cup half & half
  • 1/2 tb parsley, at end

How To Make tomato soup (quick & easy)

    In large soup kettle, saute onions in olive oil until soft and golden. Add garlic and cook for one minute more.

    Add undrained tomatoes, chicken broth, seasonings and sugar. Bring to a low boil for 4-5 minutes. Turn off heat.

    Stir in half & half. Warm again, but do not boil.

    Using an immersion blender, blend briefly until desired consistency. Sprinkle with parsley. Serve with your favorite toppings, croutons, crackers, etc.
