It's the day before shopping day, and you're looking for a quick meal, but the cupboard looks bare. If you have two cans of diced tomatoes, you have a meal. The best part? It's on the table in under 20 minutes. Goodbye Campbell's. Hello homemade. =)

Ingredients For tomato soup (quick & easy)

1 medium onion, diced

2-3 cloves of garlic, minced

1 tb of olive oil

2- 15 oz. cans of diced tomatoes, good quality, undrained

1 cup of chicken broth, i use better than bouillon

1/2 tsp salt

black pepper to taste
-
1 tsp italian seasoning
-
1/2-1 tsp garlic powder
-
1 tb sugar
-
1/4 cup half & half
-
1/2 tb parsley, at end
How To Make tomato soup (quick & easy)

1In large soup kettle, saute onions in olive oil until soft and golden. Add garlic and cook for one minute more.

2Add undrained tomatoes, chicken broth, seasonings and sugar. Bring to a low boil for 4-5 minutes. Turn off heat.

3Stir in half & half. Warm again, but do not boil.

4Using an immersion blender, blend briefly until desired consistency. Sprinkle with parsley. Serve with your favorite toppings, croutons, crackers, etc.
