Ingredients For thai hot and sour veggie soup

  • 1 lg
    carrot thinly sliced
  • 4 c
    chicken or vegetable stock
  • 2 tsp
    sambal olek or sriracha sauce
  • 2
    lemongrass stalks chopped into 3 pieces and bruised
  • juice of 2 limes
  • 4 clove
    garlic minced
  • 8 oz
    shittake mushrooms sliced
  • 4
    green onions chopped
  • 3 Tbsp
    cilantro chopped
  • 2 Tbsp
    soy sauce
  • 3 Tbsp
    sugar
  • 1 c
    bean sprouts
  • soybean chili oil (optional)

How To Make thai hot and sour veggie soup

    Add the chicken or vegetable stock to a large pot. Add the lemongrass sticks, garlic, Sambal Olek, soy sauce and lime juice. Bring to a boil reduce to a simmer and simmer 20 minutes. Strain and discard the solids.

    Meanwhile in a large skillet add a little oil and saute the carrots and mushrooms. Add to the strained stock. Add the green onions. and sugar. Cook about 3 minutes.

    Top with cilantro, bean sprouts, and soybean chili oil if using and serve.
