There is nothing like spinash and sausage together. I usually don't add the celery.

Ingredients For spinach & potato soup

2 slicebacon, cut up

1/2 cparsley, fresh and chopped

2 cmilk

2 lbspinach, fresh and chopped

1/2 tsppepper
-
1.5 tspsage, fresh chopped

1.5 tspthyme, fresh chopped

1/4 cwhite wine, dry
-
1/4 ccelery, finely chopped
-
1/4 ccarrot, finely chopped
-
2 cpotatoes, diced
-
2 cchicken broth
-
1/2 conion, chopped
-
1/4 lbchorizo sausage, cooked links, sliced
How To Make spinach & potato soup

1Cook and stir bacon in 3-quart saucepan until crisp.

2Remove bacon with slotted spoon and drain; reserve fat in saucepan.

3Cook and stir onion in fat until tender.

4Stir in broth, potatoes, carrot, celery, wine, salt, thyme, sage and pepper.

5Heat until boiling; reduce heat.

6Cover and simmer for 30 minutes.

7Stir in half of the spinach and cook for 2 minutes.

8Stir in remaining spinach; cover and cook until spinach is just wilted, about 2 minutes.

9Stir in milk, parsley and bacon; heat just until hot - Serve with sausage.
