Ingredients For spinach and mushroom noodle bowl

  • 2 Tbsp
    olive oil
  • 12 oz
    shiitake mushrooms stems removed and caps thinly sliced
  • 4
    scallions thinly sliced
  • 2 clove
    garlic minced
  • 1 Tbsp
    peeled fresh ginger
  • 2 c
    chicken broth
  • 8 oz
    rice noodles or soba noodles
  • 1 c
    fresh spinach chopped
  • 1
    lime juiced
  • 2 Tbsp
    fish sauce

How To Make spinach and mushroom noodle bowl

    Cook noodles according to package directions drain and set aside.

    Add oil to large Dutch oven. Cook mushrooms, scallion whites, garlic, and ginger until mushrooms are tender about 4 minutes.

    Add chicken broth and two cups of water and bring to a boil. Reduce heat and add noodles and spinach. Cook about 1 minute. Add lime juice and season with fish sauce.

    Top with the green parts of scallions.
