Ingredients For spinach and mushroom noodle bowl

2 Tbspolive oil

12 ozshiitake mushrooms stems removed and caps thinly sliced

4scallions thinly sliced

2 clovegarlic minced

1 Tbsppeeled fresh ginger

2 cchicken broth
-
8 ozrice noodles or soba noodles

1 cfresh spinach chopped

1lime juiced

2 Tbspfish sauce
How To Make spinach and mushroom noodle bowl

1Cook noodles according to package directions drain and set aside.

2Add oil to large Dutch oven. Cook mushrooms, scallion whites, garlic, and ginger until mushrooms are tender about 4 minutes.

3Add chicken broth and two cups of water and bring to a boil. Reduce heat and add noodles and spinach. Cook about 1 minute. Add lime juice and season with fish sauce.

4Top with the green parts of scallions.
