Southwest flavor to a creamy vegetable chowder... Change the vegetables to whatever you like, keeping the total number of cups of vegetables about the same.

Ingredients For spicy vegetable chowder

  • 4 c
    chicken broth or water plus chicken bouillon
  • 2/3 c
    chopped onion
  • 2/3 c
    chopped celery
  • 2/3 c
    chopped carrots
  • 2 c
    chopped kale
  • 1 c
    potato, cut into cubes
  • 1/2 c
    fresh or frozen corn
  • 1/4 c
    sweet or jalapeno pepper
  • 2 c
    broccoli florets, coarsely chopped
  • 1/4 tsp
    black pepper
  • 1/4 tsp
    garlic powder
  • 2 dash
    worcestershire sauce
  • 4 Tbsp
    flour
  • 1/2 c
    water
  • 1 c
    shredded velveeta cheese
  • 1 c
    salsa
  • 1 c
    milk

How To Make spicy vegetable chowder

    In a large pot, simmer vegetables in broth until tender, 15 to 20 minutes. Add broccoli in the last 5 minutes of cooking so it doesn't breakdown entirely (or slightly cook the broccoli separately and add at the end).

    Add seasonings to pot. Whisk the flour into the water and add to the pot to thicken the soup. Cook until thickened.

    Stir in cheese until melted and then add salsa

    Warm milk in the microwave and add to pot. Heat thoroughly, without boiling, to avoid curdling.
