Ingredients For spicy mixed vegetable stew (yetakelt w'et)

1 cfinely chopped onions

2garlic cloves, pressed

1 Tbspberbere

1 Tbsphungarian paprika

1/4 cghee
-
1 cgreen beans, sliced

1 ccarrots, chopped

1 cpotatoes, cubed

1 ctomatoes, chopped

1/4 ctomato paste

2 cvegetable stock
-
salt and pepper

1/4 cfresh parsley
How To Make spicy mixed vegetable stew (yetakelt w'et)

1Saute onions, garlic, berbere & paprika in ghee for 2 minutes.

2Add beans, carrots & potatoes. Saute for 10 minutes, stirring occasionally to prevent burning.

3Add tomatoes, tomato paste & stock. Bring to a boil, cover & simmer for 15 minutes or until the vegetables are tender.

4Add salt & pepper to taste & mix in the parsley.
