Very simple to put together; very big on taste! You can also use cream of mushroom soup in place of the tomato soup for a different flavor. This is a family favorite; even the kids and husband can make it.

  • 1 lb
    prepared meatballs, cooked (or frozen)
  • 3 to 4 sm
    red potatoes, scrubbed and cut in large cubes
  • 1 c
    peeled baby carrots
  • 2 stalk
    celery, trimmed, washed, and sliced
  • 1/2 md
    onion, large slices
  • 1 tsp
    cracked black pepper
  • 1 pkg
    onion soup mix
  • 2 c
    boiling water
  • 1 can
    condensed tomato soup

How To Make souper-simple meatball stew

    Place meatballs in a crock pot set on low power. Add potatoes, carrots, celery, and onion in layers. Sprinkle with the black pepper.

    Combine soup mix and boiling water in a mixing bowl until dissolved. Stir in tomato soup until uniform. Pour over meatballs and vegetables in crock pot. Top off with water if necessary to just barely cover vegetables.

    Cover and cook on low power for 5 to 6 hours. Taste and adjust seasonings. It may not need extra salt because of the salt in the soup mix. Let your taste be your guide. Stir and serve in soup plates, with corn muffins, sourdough rolls, or biscuits.
